Foodie Friday: Peanut Butter and Jelly Oat Bars

Remember last week when I shared those delicious Larabar knock-offs? I’m back with more easy snacks, and I think I just may make this a weekly event. While pregnant and especially in the early nursing days, I was often looking for quick, nutrient dense snacks. I’m happy to share my findings with you, dear readers!

These bars are for those days when you have an appointment, a tired baby, an empty fridge…and there’s no lunch. They’re filling, forgiving, delicious, and gentle on the wallet.



1.5 cups peanut butter

1.5 cups rolled oats

1 cup of chopped dried cherries, cranberries, or raisins for a milder flavor

1-3 T honey

1 t sea salt

dash of vanilla (make your own?)


Mix all ingredients by hand or pulse in a food processor.

Plop in a 9×9 pan, or if you have lots of extra time and willing, little hands, shape into balls.

Chill, cut, and grab a few for the road!

Note: If the mixture is too wet, add some “texturizer” – dried, shredded coconut, sunflower seeds, flaxseeds etc. If it’s too dry, you can add some coconut oil.
